I don't know about you, but I always seem to crave something sweet with my afternoon cuppa or after dinner. These little beauties are great to keep in the fridge or freezer as an easy snack when that craving hits. They have a beautiful caramel flavour to them…Yum!

What you will need:

2 cups dessicated coconut

12 medjool dates, seeds removed (or approx 26 dried, pitted dates)

1 teaspoon vanilla extract or vanilla bean paste

Pinch of salt

Here’s what to do:

1. Place all of the ingredients in a food processor and blitz until well combined and the ingredients have broken down. (If the mixture seems too dry add half a tablespoon of melted coconut oil).

2. Press mixture firmly into a lined baking tin or glass dish.

3. Place in the fridge for 2 hours.

4. Remove from tin and cut into squares to serve.

I sometimes swap the dates for some dried apricots. If these are not devoured by the family immediately they'll keep in the fridge for a few days or you can freeze them.
